Catfish Etouffee – Recipe

 

        Ingredients list:

1 oz margarine / butter
1/3 cup flour
1 cup onions, chopped
1 cup bell pepper, chopped
1/4 cup celery/optional
1 medium clove garlic, minced
2 cups chicken broth
1/8 teaspoon red pepper
1/8 teaspoon black pepper
1 teaspoon salt
Tabasco
1 or 2 pounds catfish / best in nugget form
3 cups Cooked rice (depending on amount to be served cups to vary)

 

          Instructions:

First off you will need to make a roux.   Melt margarine/butter.  Then add in flour and cook slowly on lower heat until texture and color of roux are achieved, a nice golden brown color and nutty smell is what your looking for , usually takes about 10-12 minutes. Then add chopped vegetables and Saute about 10 to 15 minutes until veggies are well cooked down. Then add chicken broth (can usually add salt and pepper in moderation) . Stir and simmer about 15 minutes and then add in Cajun seasonings and catfish.  Stir well and cover. Cook over medium heat about 20 minutes. Serve over; rice.
