Catfish Courtbouillion – Recipe

Ingredients

3 large onions, diced
3 cloves garlic, diced
1 bunch onion tops, diced
1 bunch parsley, chopped
1 medium bell pepper, diced
3/4 cup oil
1 ounce can tomato sauce
1 can Rotel
1/2 can tomato paste
2 tablespoons roux
3 cups water
3 pounds catfish filets
Cajun Seasoning , salt/pepper
Green onions

Instructions:

Start with all veggies in on pan and saute then down in oil until they are tender. Then add in roux , tomato sauce, tomato paste and rotel and then stir all together well getting a good mix adding in some cajun seasoning here and salt/pepper. Then add in 3 cups of fish stock (can sub w/ water) and let simmer for about 1-1.5 hours allowing to cook down some. Then add in catfish along with parsley and green onions and a little more cajun seasoning (teaspoon or so). Then cook over medium heat for about 15 more minutes and serve over rice.
