Cajun Swamp Gas Chili

3 lbs ground meat (can sub half pork/half beef or lamb/Deer)
1 8oz can tomatoe paste
1/4 cup veg oil
2 cup vidalia onion (chopped) – (sub red/white onion)
1 cup bell pepper (chopped)
2 cup green onions (onion tops) (chopped)
2 cup celery (chopped)
3 teasp Louisiana Hot Sauce (whatever brand available)
2 jalapeno pepper (chopped) – (leave in seeds for x-tra heat)
4 tbsp chili powder
2 teasp mustard powder
2 tbsp cumin
2 teasp black pepper
Cajun Seasoning to taste (whichever brand available)
1/4 cup worcestershire sauce
1 cup of cooking wine (choice)
1/6 cup of molasses
1/4 cup of jelly (grape)
3-4 cups of water (or more if needed)

Directions:

Start off with veg oil and ground meat in a pot and brown the meat well and then drain the excess fat. In another pot add in vegetables and saute them over medium heat for approx 10-12 minutes adding in tomatoe paste toward end and brown mildly. Once meat and vegetables are done then combine together along with spices and liquids and simmer on low/medium heat for approx 2-2.5 hours stirring occassionally. Add in cajun seasoning to taste.
