Cajun Baked Catfish

Marinade:

1 – tsp cajun hot sauce
2 – tsp mustard (reg)
1 – cup italian dressing
1/2 – garlic clove chopped fine
1/2 – tsp salt
1/2 – tsp ground black pepper
Juice from 1/2 a lemon

Ingredience:

2 – lbs of filet catfish (can sub w/other fish if needed)
2 – med sized onions
2 – lemons
1/2 – tsp cumin
1/2 – tsp thyme
1/2-1 box corn flake crumbs
Salt

Directions:

Take all ingredience for the marinade and combine into a bowl.  Then add in your catfish filets and place into refrigerator for 1-1.5 hours.

Use a non stick cookie sheet or u can grease a regular oven pan.

Remove the filets in marinade from the frig.  Then remove from marinade and coat with corn flake crumbs evenly and then place them onto the cookie sheet/Pan.  Once all filets are coated and onto the pan ,  take one lemon and slice it into very thin slices and place a couple ontop of each filet , then do the same with the onion slicing very thin. Then once lemon and onion are added , add the thyme and cumin seasonings over the onion/lemon on filets and then take the other lemon and squeeze lemon juice over the filets.

Place the pan of filets into a 350 degree oven for 25-30 minutes or until fish browns well.

Take pan of filets out of over and sprinkle with your favorite cajun shake seasoning.
