Cajun Alligator Sauce Piquant

Had a couple of questions about how alligator is prepared and what kind of recipe’s is it more popular in, so here is one found very often in cajun country.  Enjoy!

Ingredience:

2-5lbs – Alligator meat
1 -  can tomatoe sauce (16 oz)
1/4 – cup butter or margarine
1 – chilli pepper / or hot pepper
1 – onion chopped
1 – cup bell pepper chopped
1 – cup celery chopped
1/4 – cup onion tops chopped
1/4 – cup parsley chopped
2-3 – whole tomatoes diced
1/2 – cup of mushrooms sliced
3-5 – cloves of garlic sliced thin/minced
4 – cups of water
Cajun Seasoning (which ever available)
Paprika

Instructions:

Season all alligator meat liberally with cajun seasoning and paprika to taste and allow to sit in frige for 10-15 minutes. In a 5 quart pot or larger melt butter/margarine then add onions/celery/bell peppers/garlic and seasoned alligator meat and saute over medium heat (10-12 minutes) until all veg’s are wilted and meat is browned.  Then add in the chopped tomatoes , tomatoe sauce , and water. Cover over medium heat for 30-40 minutes, until oil rises to top. Then add in mushrooms , onion tops , and parsley  then season again with Cajun seasoning and salt to taste.  Allow to simmer on medium heat for 15-20 more minutes. Serve over Rice !              (Alligator may be replaced with other form of seafood)
